Sounds like a formidable task with all these flights you're about to take however it can be simpler than you think!
I took my 4 y/o for a visit home to America over the summer and fortunately, he was absolutely fine on the flight (circa 10/11 hours on the plane). I expected the absolute worst from him and when it didn't happen, I was greatly relieved!!! He ended watching children's TV for a good chunk of the flight.
Anyway, to 'arm' myself I bought him his own cassette walkman (circa £10 from Early Learning Centre). I also picked up a couple of 'I Can Learn' books. They're geared for ages 3-5 and includes a sheet of stickers (to reward with) and some wipe-clean pages within so that you/your child can reuse the pages. You'd have to buy some dry markers, of course, but it was useful and we still use the books now. The two which I bought are 'reading your first words' and 'starting to count'. They're published by Egmont World Limited. Great activity for parent/child interaction.
