Our favorite are the ones coated with shaved dark chocolate (optional).



Chocolate Truffles
Ingredients:
 • 8 ounces good-quality semisweet
   chocolate, chopped
 • 1/2 cup heavy cream
Optional
 • shaved dark chocolate
 • unsweetened cocoa
 • crushed pecans
 • crushed walnuts
 • coconut
Directions:
 1.  Bring the cream to a boil in a small,
     heavy saucepan.
 2.  Remove from the heat and immediately
     stir in the chocolate until chocolate is
     completely melted and well blended.
 3.  Pour chocolate mixture in a shallow
     glass container and refrigerate until
     firm, about 2 hours.
 4.  Dip a melon baller or measuring spoon in warm water and scrape it across the surface of the cold truffle
     mixture to form a 1/2-inch ball.
 5.  Coat with unsweetened cocoa, shaved dark chocolate, nuts or coconut or melted chocolate.
Melted Chocolate option:
 6.  Melt about another 10 ounces of good quality semisweet, dark or white chocolate in a double boiler.
 7.  Cool to about 90 degrees F.
 8.  Dip chocolate balls in melted chocolate and set on a rack to cool.
