Sweet Potatoes with Lime

I don't have a recipe for this, but it is so easy and is very good.  It needs little looking after (you can keep it warm on the stovetop or oven once done or reheat) 



Take required amount of sweet potatoes, wash and roast until they are soft and "mushy" to touch.

Remove and cool until cool enough to handle (if I am in a hurry I use a tea towel or oven mitts).

Cut in half and scoop out soft flesh.

In a bowl, combine sweet potato flesh, the juice of one lime and the green zest of one lime. Mash/purree until smooth.

Serve warm.  This recipe can be done earlier in the day or the night before - it reheats well.
