Banana Chocolate Chip Muffins
Ingredients:
 • 1 3/4 cup flour
 • 1 teaspoon baking powder
 • 1/2 teaspoon salt
 • 1/2 cup sugar
 • 1/2 cup chocolate chips
 • 3 mashed bananas (approximately 1 cup)
 • 1/4 cup oil
 • 1/2 cup milk
 • 1 egg
Directions:
 1.  In a large bowl sift and add flour,
     baking powder, and salt. Then add the
     sugar and the chocolate chips.
 2.  Use medium mixing bowl to mash the
     bananas.
 3.  Crack the egg onto a small kitchen bowl,
     then add to the bananas and stir.
 4.  Add the milk and oil to the banana
     mixture and stir with a fork.
 5.  Pour the wet ingredients into the dry ingredients.
 6.  Use a spatula and fold/stir until the two mixtures form a lumpy batter.
 7.  You do not want to over mix the batter until it is 'smooth' - over mixing could cause tough muffins.
 8.  Line the muffin tins with muffin cups.
 9.  Use a 1/4 cup measuring cup to fill the muffin tins - make sure all the muffins have the same amount of
     batter.
 10. Bake at 400 degrees for approximately 20 minutes.
 11. Test muffins using a toothpick and the 'dent test'
 12. Place muffins in the cooling rack when done (this will avoid soggy muffins)
